Antioxidants
Oxygen is a mixed blessing. While is essential for cell function in humans, it also produces toxic substances such as peroxide, superoxide, hydroxyl radicals, and ‘excited state oxygen’. It combines with other molecules in the body to form ‘free radicals’, which are high-energy chemical substances. Research suggests that free-radical reactions are responsible for inflammation, ageing, degenerative arthritis, cancer and cardiovascular disease.
However, there are other protective agents, called antioxidants, that can help protect against this destructive process. Beta-carotene, vitamins A, E and C, selenium-containing amino acids, and enzymes such as glutathione reductase, are all antioxidants, and they can be found elsewhere in this catalogue.
